Closely related to onions, shallots are easy to grow and have a distinctive flavour that's sweeter and milder than onions, making them more suitable for using in quiches and sauces. Shallots come in a variety of shapes and sizes. They grow best in a well-drained, fertile soil in full sun, and store well into autumn.

Allium cepa Aggregatum Group 'Springfield' is a round variety of shallot, bearing shiny bronzed-skinned bulbs with good resistance to bolting. Flesh is tinted red and has a strong flavour, making this variety ideal for pickling and using in stews and casseroles. Bulbs of 'Springfield' store well into autumn.
